Aloo Chaat

Sush, Polly, Varsha, Kalpana & Sonali would willingly agree to come over to my house if I tell them that I'm preparing the yummy aloo chaat. So here's the easy recipe... hold your salivary glands!

4 Medium size potatoes
1 Medium size onion finely chopped
Oil for deep frying
Chaat masala (ideally the light coloured that you get in Delhi, else Everest chaat masala rocks too)
2 Tbsp tamarind chutney
3 Tbsp coriander chutney
Coriander for garnishing

Peel the potatoes and cut them into around 1 inch pieces, the triangular types.
Wash them and keep soaked in water for some 5 minutes.
Strain the water and let the potatoes dry for another 5 minutes.
Deep fry the potatoes till they are crispy and golden brown.
Mix them in a bowl with the onions, tamarind chutney and coriander chutney & add chat masala generously until the mixture becomes blackish.
That's it!
Serve them in small bowls, garnish with coriander and get ready for the compliments!

PS Without the chutneys too, the dry preparation tastes yummy!
