Fried Modak Recipe for Ganeshotsav

Here’s a simple and fast fried Modak recipe especially for Ganeshotsav.You can use wheat flour/ maida (all-purpose / refined flour). There are three parts to the preparation of Modak:
  1. FILLING
  2. DOUGH 
  3. FRYING
Quantity: Approximately 25-30 Modaks

Ingredients for FILLING:
4 cups grated fresh coconut
4 cups grated jaggery (gud)
1 tbsp freshly prepared cardamom powder
Some dry fruits

Preparation of FILLING:
Modak Filling
Heat some pure ghee. Ensure you maintain medium flame. Fry the dry fruits. Add grated fresh coconut and grated jaggery and keep mixing on heat. After jaggery melts and mixes properly with coconut, add cardamom powder and mix well.

DOUGH:
Knead the dough (wheat / refined flour) with some salt

FRYING:
First roll the dough into 2-3 inch diameter circles. Apply some oil on your palms if it's getting sticky.
Hold the rolled dough on left palm (for right handers) and place a spoonful of filling in the centre.

To give proper shape to the Modak, try to close the rolled dough on the tip (like closing petals of a flower) with your right hand and pinch the ends all around towards the tip of the Modak.

Deep fry Modaks on medium flame until they turn brown and crisp.

Besan Laddoo Authentic Recipe

As promised, here's the authentic besan laddoo (sweet made of gram flour) recipe on the occasion of Diwali.
Besan Laddu Recipe Ingredients:
4 Cups Besan (gram flour)
Few Cashew nuts and Almonds (if you prefer)
1 Cup Pure Ghee
Elaichi (cardamom) powder
2-3 Cups sugar powder or jaggery powder based on your preferred sweetness.

Gits Kalakand (Malai Burfi) recipe with a twist



I tried making Kalakand (Malai Burfi) using Gits instant mix. Since my folks are not very fond of dairy sweets, I added fresh grated coconut and cardamom powder to the mix and it turned out to be really delicious! Oh yes, and I also added some orange colour to the preparation so that it doesn't look too much of a dairy product. Not that I recommend using food colours, but once in a while I think it's fine.

Modak - Meaning in different languages

Modaks (Indian sweet dumplings) are the most important offerings during Ganeshotsav. Modak is believed to be Lord Ganesha’s favorite food. Literal meaning of Modak: Moda means joy... so modak means "one that brings joy".

Modak is known by different names in various parts of the world. Here is the meaning of Modak in various languages:

Modak is called Sweet Dumplings in English
Modak is called Modak in Marathi ;)
Modak is called Modagam in Tamil
In Telugu, the similar sweet offered as prasad is called Undrallu (prepared from rice flour) .
Modak is called Modhaka in Kannada

The entire credit of this idli coconut chilly chutney recipe goes to my mother-in-law. Before I got married, my favorite chutney with idli was the one provided with the idli vendor who roams around in our area on a bicycle and sells yummy idlis and medu vadas. Heat fresh mawa. Once it gives the aroma and separates out, remove from heat. Add sugar powder and finally chopped / grated fruits like bananas, apples, guava, pears and cherries.

Rajbhog and Kalingadachi Fod Recipe in Marathi

Rajbhog Ingredients:
Milk - 1 litre
Sugar - 2 bowls
Vinegar
Almond, Pistachios
Water - 5 cups

Rajbhog Recipe:

MAKING PANEER - Heat milk in a deep pan and prepare paneer (cottage cheese) by adding vinegar to it. Take it off the stove and discard the water. Place paneer in a cloth and let the residual water drain from it. Knead paneer well.

MAKING SUGAR SYRUP - In a pan, prepare sweet syrup using water and sugar.

Add the lemon yellow food color to the paneer and knead it again. Make small balls and stuff them with pieces of almond and pistachios. Put them into the sugar syrup, cover and let them boil for 8-10 minutes.

Garnish this Rajbhog with silver leaf (varka).

Kalingadachi Fod Ingredients:

Cashews, Sugar, Raspberry, Red Food Color, Green Food Color

Kalingadachi Fod Recipe:
Boil cashews and dry them. Grind to a paste.

Prepare sugar syrup and add the cashew paste. Once cooked, remove from stove.

As the mixture cools down, divide it into three parts. Add green food color to one part and red food color to the second. Knead all parts well separately. Take the colorless part and stuff it with the red mixture, shaping into balls. Stuff these balls into the green mixture, while retaining the round shape. Keep these colored balls aside for 4 hours. Slice them across the center and you will get pieces in watermelon colors. Finish up with sticking cardamom seeds.
